Love what you’ve done with the place! Love the mirror above the fire place. I’d recommend this rug from amazon. The soft geometric pattern isn’t too harsh or too floral and “girly”. I find it to strike the perfect neutral.
A soft off white or grey rug to match the accent chair would be perfect.
Also a nice deep wood rectangular coffee table would looks great to tie in the wood tones of the table.

I use the Pathfinder flip mat. It's just a basic square grid, but it's proven to be very durable and dry erase markers work well on it. If I recall correctly, you may be able to get this same thing at a game store for a tad cheaper (I did).

Only draw a map when a map is needed, such as combat. Leave everything else in Theater of the Mind. Trying to draw everything is a waste of time and effort, unless there are combats or spacial puzzles in every room a majority of map making is just wasted effort.

Try a vinyl carpet runner like this one. Put it under the door so there's at least 2 feet of runner on each side of the door (the one I linked 6 feet long but you can cut it smaller). She'll have to sit on top of it to dig and there's no way she'll be able to pull it out from under the door. This is what I did for the carpet by the bedroom door. Only downside was they started pooping on it but that was much easier to deal with than the carpet damage!
You could try the time-out method for her in the meantime until you get the runner, but it'll be time intensive. Basically whenever she digs put her in a pet carrier for 3 minutes. Then let her out but do not cuddle, praise, or apologize. Just ignore her so she doesn't associate the carrier with positive things. Sadly vets sometimes gets things wrong. I've gotten poor, almost deadly advice for insulinoma treatment before.
Does she have toys like dig boxes and tunnels? If it is from boredom having those can help keep her occupied! Another great way to give her lots of enrichment is to feed her with a feeder ball! This'll make meal time take a lot longer. Most of my ferrets will opt to get food from a feeder ball over a bowl they like it so much!
Practicaly yes, keep the paper, it serves as a reminder/note what happened in the last session, especially if there is a lot of time between sessions.
It's called pen and paper for a reason, people played it like that since the 70's. I would say draw your maps ( dungeon, forest camp, ect) with a ballpointpen on squared paper before the session. When you play with the group you all can use pencils to write the starting letter of your characters on the map to represent where you are. Cheapest and easiest solution.
If you have access to a printer you could also just print a map.

I semi-second the DM-adaptation kudos given. But I also would urge you to assess how much you are enjoying this. As much as DMs should be adaptable to players, the players should also be adaptable to the DM and try to play their game, so don't feel like you're at the mercy of your players will. It's a group effort!
As for making maps, I would recommend starting off with drawing on Battle Mats (like this pathfinder one from amazon) for scale and mimicking existing D&D maps in literature. Get a feel for what works in your game, then progress to map-making on your own terms.

Double sided tape if you can find a way to apply it without messing up your paint. Also, plastic with nubs like this on it like a desk chair mat work for keeping them off of counters. Might work on your car too.
I bought the same rug on Amazon for ~$70 for the 5x7 size. One thing to note: while beautiful and decent quality so far, it is not very soft.
