I use one of these, have the joystick mapped to WASD for movement, and the keys where WASD would normally be are mapped to arrow keys. Reload is on a mouse button cause I tried it once and I really liked it so I stuck with it. It helps that my mouse has 10 extra buttons P:

The Spectrum version has RGB, the Core is blue only. I've been using it since the Core came out (no RGB upgrade for me yet) and love it.
As per usual, technology is far cheaper in the US. The Steam controller is £36 on Steam, or £73 on Amazon.
Get the 8BitDo SN30 Pro Plus. Easily my favorite controller, and it's cheaper than the Nintendo Pro Controller. I think the only thing the Pro has over it is HD Rumble and you can't wake the Switch from sleep with the 8BitDo.

8 bitdo sn30 pro plus, it says in the description that it's compatible with windows 7 and works well on switch. The only downside is that it can't wake the switch up from sleep.

You can use various buttons as modifiers (like shift or control on a keyboard) to get many different keybinds out of the different button combinations available. A quick search on the ED subreddit will give you many keybind options.
Other good HOTAS options that are a step up from that one are the Thrustmaster T16000M, the X52, and X52 Pro. I use an X52 pro and I love it.
I'd recommend buying it from Amazon instead, buying one with a case right now and it's only $65. Might take a little longer but there's no way I'm spending nearly $100 on a controller that I'll use like once a month.
Honestly i used to do stuff like this all the time. But it still felt way too busy for me. So i bought a mouse with 12 buttons on the side as i play a lot of mmos. It's honestly so nice i only use my keyboard for WASD, CTRL, ALT and Shift. Everything else is bound to my mouse. I could never go back now.

I highly recommend this joystick and throttle for ED. It's a more reasonable price (was actually $35 on Amazon when I got mine), and there are enough buttons to control everything with the right control scheme. I got my Rift a couple of weeks ago and ED is pretty much all I've been playing since then.
All the other options listed here are very good, take them into consideration.
I wanted to add in my 2 cents and offer a wireless option: [Logitech's G602], it's been at $45 on Amazon for quite some time and commonly goes on sale at best buy for $40.
Wireless isn't for everyone, especially the more competitive users, but for the casual user, if it's compatible with your grip style, it's not a bad choice.
250 hour battery life with 2 AA's in "performance mode". In "eco" mode, I never found out how long they last. I changed the batteries out after 6 months to avoid corrosion.
great sensor, adjustable DPI, and 10 buttons, although the buttons are a little cramped and some are not always easy to reach
mouse wheel scrolls well, but there are complaints about it double clicking, which is not something I've encountered yet, since I almost never click the mouse wheel. Ever complaint has ended with the user successfully obtaining a replacement from Logitech after a quick email, however,

If you're going to be out of commission for a considerable time, you should consider getting a gaming keypad. They're roughly $80-200 (depends on the model) but they have a ton of keys on them and a joystick for movement.

Have you seen the razer Tartarus gaming keyboard? After switching from the standard keyboard, I have much less finger strain and my hand is able to stay in a much more neutral position while playing. Not sure if it suits your needs, but figured I’d share!

Ultrawings has a virtual flight stick (its only control scheme before it added HOTAS support).
It is capable, but it is simple, and it is still occasionally frustrating to use even though it is only a little more than the virtual stick.
My belief is that a virtual HOTAS is possible but that it would not be very pleasant.
Unlike steering wheels (I still want a wheel with modern force feedback for under $200, sigh), a good entry level HOTAS is affordable. The HOTAS X is $50 on Amazon.
Those who are accustomed to super high end sticks would object to it but I've found it a great entry point for Elite, and likely far superior to a (nonexistent) virtual HOTAS.
Yeah, I wish I had that one. I have this HOTAS X. There are a couple of other models with the identical setup for PS4 and Xbox One. They are all currently $75-120 on Amazon, so I'm just grateful for now that I'm only out $7.
I use a razer Gamepad and use the bartender addon to match my on-screen action bar layout to the layout of the keys.
I find it so much easier to identify what my keys are and use the joystick for sidestep and forward/back movement. I would not be able to play wow without it and keep a spare handy.
As far as losing your target, I quickly get overwhelmed when keeping track while fighting multiple mobs. I set me main target health bar to be a fair bit larger than the other mobs in the group and always use a Personal spotlight to keep track of myself when playing melee.
Keep in mind that you don't have to be a an amazing player to enjoy the game either.
