I have never seen sheets of dried noodles. Most of the dried noodles come from Thailand and Vietnam. The closest sheets are the wrappers for spring rolls but these are too thin for the application you want. Another tip, make sure your rice paper is somewhat dry before you start wrapping. If you wrap while it's still soaking wet, it'll be more likely to break. That's why I like using the double plate method. While you're making one and eating it, the other one is drying on a second plate. And before you start wrapping the second one, you wet a new one and let it dry on the first plate.
The "rice paper rose" brand that /u/Super1d suggested are also a really solid brand as well, I've used those in the past.

Instead of using a pan or a plate of hot water, I use strainer-like plastic plates in which I sandwich layers of the plates and the wrappers. I rotate them under the hot running faucet to ensure that they are soaked. I don't know how those came into my house. I am eternally grateful.
