Makagiga, offline, data stored as UTF-8 or xml, low learning curve (folder tree like in a file manager + tabs like in a web browser). It doesn't force any project structure so you can use plain text or GTD-style task lists. built-in notepad can preview basic html, markdown and wiki. I have 500+ documents in Makagiga and it still works ;)
