Encryption is realized using packing note into zip archive with password. Notepack have some other nice features but you can read more on github pages.

• each note can be encrypted as zip file (you can just unzip file and get the note) no vendor lock in here
• webdav support

This is desktop application, javafx packed as simple executable for windows and linux so no docker needed. You can download portable version for windows without installation needed or linux appimage. All releases files are available https://github.com/Ogefest/Notepack/releases

You can try mine project https://github.com/Ogefest/Notepack It's not full alternative for Notion but more like multiple notepads in one application focus on privacy without vendor lock-in.

Still on early stage of development but it's quite usable, I'm using it every day.
