Check out PandaDoc. You can create beautiful templates with tables that calculate. Use the Content Library to create various custom pieces that you want to pull into your documents as needed.

I am not affiliated with PandaDoc. We started using it a few months ago to streamline our quoting and service agreements and it has been a huge benefit for us, and everything we need clients to sign is done electronically. No paper.

Your options idea is great but don't get too caught up in the software side of things. Maybe just use your software for the quote + options.

I would also send a professionally designed (mini brochure style) PDF which reinforces benefits. Remember, while your appealing to their logical side you also need to appeal to their emotional side. Therefore, I suggest you find suitable visuals for this document.
