I think it will be extremely expansive to an entire student portal on slack and it’s probably gonna be a mess.

I suggest you try Whaller. Their equivalent to Slack channels have tabs which include messages/posts, a file manager, a task kanban, videoconferencing and a few other useful stuff for what you need.
